Sweet & Smoky Minute Steaks with Roasted Tomatoes and Lemon-Glazed Mushrooms

Heat oven to 200. Put tomatoes (still on the vine) in a small oven-proof dish, drizzle with olive oil and sprinkle with salt then put in the oven. Cook for 25 – 30 minutes.
Add a drizzle of olive oil, salt, pepper and the lemon juice to a large frying pan and turn on medium heat. Add the mushrooms (halved) and stir to coat them in the juice. After they have reduced slightly, add the sugar and a drop of water if it looks too dry. Stir again the turn heat down to low.
In a griddle pan, add a drop of olive oil and turn on high heat. Add the minute steaks, cooking for 30 seconds on each side (for rare) then place on a board to rest.
Serve all together on a bed of dressed peppery salad leaves and enjoy!
