Honey Roasted Pork Tenderloin with Baked Apple Mash
500g Pork Tenderloin
2 tbsp Honey
2 tsp Wholegrain Mustard
1 Apple, peeled & cubed
4 White Potatoes, peeled & cubed
Salt & Pepper
Preheat oven to 200. Bake your apple pieces for 10 minutes. Boil potatoes until soft, drain and add a pinch of salt and a knob of butter, then add your apple and mash it all together.
Heat an oven proof pan or skillet on a high heat. Add a large pinch of salt, some ground black pepper and a drizzle of olive oil. When hot, place the tenderloin in and brown all over (roughly 2 minutes on each side) then place in the oven for 15 – 18 minutes.
Remove from oven and add the honey and whole grain mustard to the pan. Place on medium heat for 5 minutes and turn the tenderloin so it glazes all over.
Rest the pork for 5 minutes then slice and serve on top of your mash. Pour the juices over the plate and dig in!
