4 Pork Cheeks
1 Yellow Pepper
1 Green Pepper
1 Red Onion
2 Vine Tomatoes
½ tsp Chilli Flakes
A slice of lemon
Preheat your oven to 170. Place the cheeks in a roasting dish with a little water and a drizzle of olive oil. Sprinkle over the paprika, oregano and chilli flakes. Cover with lid or foil and place in the oven for 2 hours.
Meanwhile prepare your tacos and veg. Slice the peppers, tomatoes and onion up nice and thin and grate the carrot.
When the cheeks are done, shred them with 2 forks. Add a little drizzle of olive oil, a squeeze of lemon and a pinch of salt then mix.
Finely chop the fresh coriander and sprinkle over the pork. Serve the fresh veggies inside your tacos, the pile your pork on top!
