This is a simple and quick recipe when in a hurry!
Any vegetables will work but to make the dish look attractive it’s nice to include peppers and carrots.
Place the chops in a roasting or shallow casserole dish (you may want to serve this at the table) add in the prepared vegetables and drizzle some oil over the vegetables and lamb.
Place the rosemary in the dish and if you are using mince sauce spread this over the lamb chops.
Season with salt and pepper
Bake in the oven for about 35-40 minutes
Serve at the table with minted butter mash and green peas.
