The Best Beef Fajitas
Ready in: 10 minutes
2 fresh chilli peppers (your choice of heat), sliced
A handful of fresh coriander, roughly chopped
Flatbreads (1 or 2 per person)
In a large pan on high heat add the coconut oil and tomato puree. When hot, add in the organic beef fajita strips and vine tomatoes, toss to cover the contents of the pan in the juice. After 4 minutes, turn the heat down to medium and add onion, pepper and chilli. Stir well. Cook for a further 5 minutes.
Serve on top of fresh flatbreads, a dollop of sour cream then sprinkle with coriander leaves. Wrap it all up and enjoy!
