Maple & Thyme Roast Parsnips

1kg parsnips, peeled and chopped
2 tablespoons olive oil
2 tablespoons maple syrup
4-5 sprigs of fresh thyme

  1. Preheat the oven to 200°C/180°C fan/Gas mark 6.
  2. Place parsnips into a large roasting tin and pour over the oil and maple syrup.
  3. Add the thyme sprigs to the pan and toss until the parsnips are evenly coated.
  4. Roast for 45 minutes until golden, sticky, and cooked through.
