Celebrating British Food Fortnight with Our Next ‘How to Cook’ Article

 

British Food Fortnight, starting on 18th September 2021, is a great opportunity to rethink the importance of shopping seasonal, British produce. British Food Fortnight

British Food Fortnight, an annual two-week celebration of the diverse and delicious food produced in the UK, runs from the 18th of September to the 3rd of October this year. The Fortnight is the biggest national celebration of British food, now in its 20th year of celebration.

 

Everyone from schools to care homes and villages to large cities come together to show their appreciation for British, seasonal produce. Look out for activities and cooking lessons, promotions in eateries and shops plus meet the producer features and an extended range of British food in even the biggest of supermarkets.

 

Why British Lamb?

As British farmers ourselves, we understand the importance of farming in Britain. This is especially significant in terms of sustainable food production and supporting the country’s native wildlife and habitat. Livestock, like our own herd of native Aberdeen Angus cattle, play a key role in maintaining the countryside and our farming grassland that would otherwise be wasted. Grazing animals such as cattle and sheep help to protect rare plants and wildlife too, not to mention provide the country with homegrown, nutritious meat.

Of course, allowing these grass-loving animals to graze on organic grass and grass alone is yet another step in the right direction for the environment (read more about that here). All our organic beef and lamb is grass fed for life, never fed grain designed to pack on weight. This is not only beneficial to the environment and provides a better standard of animal welfare, but also produces a more nutritional end cut of organic meat.

How to Cook Rack of Lamb

Ingredients

  • Organic Rack of Lamb, 500g
  • 1 organic Garlic clove, roughly chopped
  • Fresh Rosemary, roughly chopped
  • 2 tbsp Olive Oil
  • Salt
  • Pepper

 

Method:

  1. Place the lamb rack in a dish and sprinkle the chopped garlic and rosemary around the rack. Drizzle with olive oil and leave to marinate for a few hours or preferably overnight.
  2. When ready to cook, preheat the oven to 200C. Season the rack of lamb with a generous helping of salt and pepper.
  3. Heat a frying pan on a moderate temperature and place the rack fat side down for 2-3 minutes to brown slightly. Then, quickly brown the ends of the rack too, ensuring all the meat is seared.
  4. Place the rack of lamb in a roasting tin and cook for around 10 minutes for rare, 17-20 minutes for medium and 25 minutes for well-done.
  5. When cooked for the desired time, remove from the oven and transfer the lamb rack to a plate and rest for 5 minutes before serving and slicing.
