Malaysian Turkey Laksa

Organic Turkey Malaysian Laksa recipe


Serves 4

Cooking time: 15 minutes plus 5 minutes preparation



  • 500g turkey breast, chopped into chunks
  • 1l turkey or chicken stock
  • 1 tbsp thai red or green curry paste
  • 1 red pepper
  • 200g beansprouts
  • 250g rice noodles
  • 400ml can coconut milk
  • Handful of coriander
  • 1 lime
  • 1 red chilli (optional)



  1. Fry the curry paste in a large saucepan just for a minute before adding the stock and bringing to the boil.
  2. Add the turkey and cook for 5 minutes before popping in the rice noodles and peppers and cooking for 2-3 minutes more.
  3. Add the beansprouts and coconut milk while simmering.
  4. Season with lime juice, and a little sugar if desired, to taste.
  5. Serve into bowls and sprinkle with coriander and extra fresh chilli if you like it hot!
