Kamut is one of the earliest forms of grain, once grown by ancient Egyptians. Famous Hedgehog Bakery use an unbleached kamut flour for this wonderfully flavoured loaf, its light yellow colour forming a crisp, golden crust.

Founders of Famous Hedgehog, Jamie and Rose Campbell, are passionate about delicious food and its provenance. Having lived in Canada and London they moved to a teeny village in the wilds of Dorset. Frustrated by the lack of good bread, the seed of an idea was born...
Jamie and Rose found a wonderful baker in France and upped sticks for 5 years, immersing themselves in bread heaven, learning from a master craftsman. Returning to Dorset, they built a bread oven in their stable block in 2000.
Nearly two decades later, the family business has stuck to its roots making organic, handmade and wood fired bread. Proud of their traditional techniques, Hedgehog bread is proved in wood cupboards on cloth, moulded by hand, and placed in small batches into the wood fired oven on classic wooden peels.
Baked fresh every morning and delivered to our farm daily, these breads and pastries are a thing of floury beauty.

Lovely bread, easier on the digestion than regular sourdough, but quite dense. I do prefer the holes!
