Also know as guanchalle, this carbonara-essential comes from the pork cheek or jowl and is originally from Umbria in central Italy. Dry cured with salt and spices, the flavour is sweet, salty and more-ish. It can be eaten as it is but due to the fattiness of the cheek is typically cooked into delicious sauces.
