Mother’s Day 2021: Recipe Ideas

There’s nothing like a lovingly home-cooked dish to show Mum your appreciation this Mother’s Day (even if it does have to be dropped at the door). Whether your Mum prefers a breakfast in bed or a full Sunday roast, we’ve collected a few recipe ideas to really impress the head of the household on Mothering Sunday – it’s this Sunday by the way!

  

Start the Day Right

In our previous Mother’s Day article (there’s still time to get the perfect food gift box– find out more here), we introduced our new for 2021 Breakfast in Bed Gift Set. This charming set includes a fresh sourdough loaf, organic smoked salmon, Sussex Slipcote cheese and an organic avocado. These ingredients make for a delightful, luxury Mothering Sunday breakfast and even offer enough for Dad, too. With all the organic products packed in the box (aside from organic eggs – you can find these at our local Farm Shops or buy from our local delivery drivers), the next step is to simply follow our delicious recipe:

 

  1. Fill a medium sized saucepan with water and bring to a rolling boil. Slowly lower the eggs into the water using a spoon. Set your timer for 4-5 mins for runny eggs, or 6-7 mins for soft-boiled eggs – whichever Mum likes best on her toast!
  2. Meanwhile, toast two slices of your Sourdough and mash up both avocados using a fork.
  3. When your toast is done, dollop a good amount of smashed avocado onto each slice.
  4. Next, curl strips of smoked salmon on top of the avocado and sprinkle a generous amount of the Slipcote cheese over the top (it’s just like feta, so will crumble very easily).
  5. When your eggs are just right, take them from the pan and plunge into a bowl of cold water as soon as the timer goes off – this will stop them cooking and cool the shells quickly for peeling. Peel the shell off, cut into halves and pop on top of your toast.
  6. Sprinkle with fresh organic herbs, salt and pepper and serve!

 

An Afternoon Treat

 If you know your Mum has more of a sweet tooth, perhaps baking her a cake is more likely to bring a smile to her face? Victoria Sponge is one of the easiest baking recipes – perfect for beginners or for getting the little ones involved! This is a sure crowd-pleaser. For the cake you’ll need:

  • 200g organic flour
  • 200g caster sugar
  • 200g organic butter
  • 3 eggs
  • 1 tsp vanilla
  • Jam

 

Although jam alone can make for a yummy filling, adding butter icing makes a true Victoria Sponge. For this you’ll also need:

  • 100g icing sugar
  • 50g butter

 

  1. Preheat the oven to 160C fan / 180C / gas mark 4 and grease and line two round cake tins.
  2. Sift the flour into a large mixing bowl. Beat the eggs in a small bowl then add them, the soft butter, the caster sugar and a teaspoon of vanilla into the large bowl. Check all the ingredients are in the bowl!
  3. Whisk the mix together (an electric whisk is preferrable) until smooth and creamy.
  4. Divide the mixture between the two cake tins and place into the centre of the oven.
  5. Cook for 20-30 minutes until golden. To check if the cake is cooked, place a skewer or knife into the centre. If it comes out clean, then you’re good to go! If not, place back in the oven for another 5 minutes.
  6. Whilst the cakes are cooling on a rack, mix the icing sugar with butter and 2 tablespoons of warm water until smooth.
  7. Once the cakes are completely cool, layer the underside of one with jam and the other with the butter icing. Carefully place the sides together and enjoy!

  

The Whole Hog (Or Cow!)

Now, if you really want to impress Mum, how about trying a Sunday Roast? A while back we talked about the importance of getting the right organic meat cut for a delectable roast and introduced the highlights of our grass-fed Beef Topside. Read our Topside Article here, and follow this recipe for the best roast Mum’s ever tasted!

 

Ingredients:

  • 2kg Grass-fed, organic Beef Topside
  • Flour (for dusting surface)
  • Freshly Ground Pepper
  • Olive Oil
  • 400g Organic Carrots
  • 600g Organic Shallots
  • 2 Large Organic Potatoes
  • 2 Organic Parsnips
  • 330g Organic Brussel Sprouts
  • Dried Rosemary
  • Garlic Cloves

 

Method:

  1. Take meat out of the fridge and allow to come to room temperature for 30 to 60 minutes before cooking. Once ready, preheat oven to 220°C/200°C fan/gas mark 7.
  2. Dust surface with flour, then drizzle the beef joint with 1½ tablespoons of olive oil and a good pinch of freshly ground pepper and rub into the meat. Avoid using salt as this encourages juices to escape!
  3. Place your vegetables, we suggest carrots, shallots, potatoes, parsnips and Brussel sprouts, into a roasting tray and sprinkle with olive oil and salt. To stop your veggies drying out you can always add a splash of water too.
  4. Place the beef topside on top of the vegetables and place the tray into the pre-heated oven. Cook for anywhere between an hour to an hour and half, depending on how you prefer your beef. Remember to baste the joint halfway through cooking time by spooning the excess juices over it.
  5. Once cooked, allow the meat to rest for up to 30 minutes before carving and eating. Keep in a warm place, but don’t worry too much about the beef getting cold as it will hold the heat.
  6. As the meat relaxes, it will release juices – use this to make the most delicious gravy! Finally, carve the beef and serve alongside the roasted veg.
