SAUSAGES with pasta & broccoli
- 400g pasta shapes
- 500g broccoli cut into bite size
- 200g Eversfield Organic sausages with casing removed
- 1 red pepper cut into 1cm squares
- 4 garlic cloves – crushed
- 50g Parmesan cheese
- Oilve oil
- Salt and fresh black pepper
- Begin to cook the sausage and peppers in a large fry pan breaking the sausage meat into small pieces. Cook for about 5 minutes until it begins to brown.
- Bring water (around 1 litre for every 100g raw pasta) to a rolling boil in a large pan.
- Add 1 tbsp salt and the pasta, stir to separate, cover and bring back to the boil – cooking time should be around 10 minutes but check after about 7- 8 mins.
- Meanwhile add the garlic, salt and black pepper to the sausage.Cook for a further 2-3 minutes.
- Add the broccoli and 100ml of hot water from the pasta to the sausage mix.
- Cover and cook for 2-3 mins until the broccoli turns bright green,
- Uncover and cook until the water has evaporated and the broccoli is tender.
- By now the pasta should be cooked. Add the broccoli mixture and cheese, mix and combine.
- Serve immediately with more cheese at the table.
